Wedderspoon Manuka Honey: From Hive to Home

As the UK's distributor for Wedderspoon, we get asked a lot about what actually happens between a wild Manuka blossom in New Zealand and the jar on your shelf. Here's the honest version of that journey.

It starts with wild Manuka, not a plantation

The Manuka bush, Leptospermum scoparium, grows wild across New Zealand, with its distinctive pink and white blossom. Wedderspoon's bees forage on wild Manuka growing near Lake Wakatipu and Mt Cook, rather than on cultivated Manuka plantations, so each harvest reflects that season's own mix of rain, sun, wind, and snow. That's also why the colour of a jar of raw Manuka honey can vary slightly from batch to batch. It's a genuine sign of a natural, unblended product rather than something to worry about.

Harvested with the bees' welfare in mind

Beekeepers extract the raw comb quickly and with as little disturbance to the colony as possible, and always leave enough honey behind to see the bees through winter. From there, it's a short trip to Wedderspoon's factory, based near the hives themselves, so the honey isn't sitting around before processing begins.

Gently processed, never boiled

At the factory, warm air is circulated around the raw honey to loosen it into a liquid and strain out natural impurities, without boiling it or heating it above the honey's own working hive temperature. That's what keeps it classed as raw honey, and it's also why you'll see some natural texture and crystallisation in the jar over time, that's simply what unheated honey does.

Tested before it ever leaves New Zealand

Every batch is independently tested against the New Zealand Ministry for Primary Industries' Manuka5 standard, the chemical and DNA testing that confirms it's genuinely Manuka honey, before it's ever jarred. Only then is it packed and labelled in New Zealand, ready for export.
